Seared Australian Southern Bluefin Tuna

Ingredients 
  • Tuna: 100g

  • Cream cheese

  • Lemon Dressing A:

    • Lemon juice: 45cc

    • Honey: 10cc

    • Extra virgin olive oil: 65cc

  • Wasabi

  • Ho-shiso flowers (flowering shiso)

Directions
  • Mix the ingredients in Section A to prepare the lemon dressing.

  • Sear the tuna, slice it, and lightly smoke it using a smoker.

  • Top the tuna with wasabi, lemon dressing, cream cheese, and ho-shiso flowers.
