Tuna: 100g

Cream cheese

Lemon Dressing A:

Lemon juice: 45cc

Honey: 10cc
-
Extra virgin olive oil: 65cc

Wasabi
-
Ho-shiso flowers (flowering shiso)
Directions

Mix the ingredients in Section A to prepare the lemon dressing.

Sear the tuna, slice it, and lightly smoke it using a smoker.

Top the tuna with wasabi, lemon dressing, cream cheese, and ho-shiso flowers.
