Australia’s premium food and wine took centre stage in Japan’s culinary capital

Australian Grape Aji Blanco

Ingredients 
  • Onion (grated): 5g

  • Macadamia (finely chopped): 80g

  • Bread (white part only, no crust): 2 slices

  • Water: 300ml

  • Olive oil: 2 tbsp

  • Sherry vinegar: 2 tbsp

  • Salt: as needed

  • White pepper: as needed

  • Table grapes: 3 each

Directions
  1. Combine all ingredients in a bar blender and blend until smooth to create a creamy soup.

  2. Pour the soup into a bowl. Top with sliced grapes and drizzle with olive oil.
