Mascarpone & Mandarin Creamy Layer

Ingredients 
  • Australian Cream: 1 cup

  • Australian Mascarpone Cheese (chilled): 1 cup

  • Powdered Sugar: 1/4 cup

  • Fresh Finger Lime Pulp (about 4-5 limes): 2 tbsp

  • Vanilla Beans Paste: 1 tsp

  • Pinch of Fine Salt

Directions
  • In a chilled bowl, whip mascarpone and cream together until soft peaks form.
     

  • Add powdered sugar, vanilla paste, and salt. Whip briefly to combine.
     

  • Gently fold in finger lime pulp — do not overmix to preserve the caviar-like texture.
     

  • Chill for 30 minutes before layering or piping.
