Macadamia Nuts

Ingredients 

For the Macadamia Nuts

  • Australian Macadamia Nuts (lightly roasted): 1 cup

  • Macadamia Oil: 1 tsp

  • Pinch of Salt Flakes

For the Savoury Sable

  • Australian Unsalted Butter (softened): 150g

  • Australian Grated Parmesan or Aged Cheddar: 100g

  • Plain Flour: 150g
  • Salt: 1/2 tsp
     

For the Vegemite Gel

  • Vegemite: 2 tbsp

  • Vegetable Stock: 1/2 cup
  • Agar Agar Powder: 1 & 1/2 tsp
  • Lemon Juice: 1 tsp
  • Optional - Honey: 1 tsp
Directions

Make the Savoury Sable

  • Cream butter and cheese until smooth.

  • Add flour, cornflour, salt, pepper, and herbs. Mix into a dough.

  • Roll into a log, chill for 30 mins, then slice into 5 mm rounds.

  • Bake at 180°C for 12–15 mins until golden. Cool completely.


​Prepare the Vegemite Gel

  • In a saucepan, combine Vegemite, stock, lemon juice, and agar agar.

  • Bring to boil, simmer for 2 mins.

  • Pour into a shallow tray and chill until set.

  • Blend into a smooth gel.
     

Season the Macadamias

  • Toss roasted macadamias with oil, salt.

  • Toast lightly in a pan for extra crunch if desired.
