
Australian Lamb Loin Berries Blanket

Ingredients
For the Lamb

Australian Lamb Loin (trimmed): 300g

Australian Olive Oil: 2 tbsp
- Salt & Black Pepper: to taste
- Fresh Rosemary (chopped): 1 tbsp
For the Berries Blanket

Fresh Australian Blueberries, Raspberries & Strawberries: 1 cup
-
Zest Australian Orange: 1 nos
- Lemon Juice: 1 tbsp
- Pinch of Salt
For the Mustard Aioli

Australian Honey: 1 tsp
- Mayonnaise: 0.5 cup
- Dijon Mustard: 2 tbsp
- Lemon Juice: 1 tbsp
- Clove Garlic (minced): 1 nos
- Salt & Pepper: 1 nos
Directions
Prepare the Lamb

Season lamb loin with salt, pepper, and rosemary.

Sear in hot olive oil until medium rare (about 3 mins per side).

Rest, then slice thinly into canapé portions.
Make the Berries Blanket

In a saucepan, gently heat berries, conserve orange zest, lemon juice, and salt.

Simmer until slightly thickened but still vibrant. Add agar – agar and Cool
completely.
Mix the Mustard Aioli

Whisk all aioli ingredients until smooth.

Chill for 30 mins before serving.
