Australian Lamb Loin Berries Blanket

Ingredients 

For the Lamb

  • Australian Lamb Loin (trimmed): 300g

  • Australian Olive Oil: 2 tbsp

  • Salt & Black Pepper: to taste
  • Fresh Rosemary (chopped): 1 tbsp
     

For the Berries Blanket

  • Fresh Australian Blueberries, Raspberries & Strawberries: 1 cup

  • Zest Australian Orange: 1 nos

  • Lemon Juice: 1 tbsp
  • Pinch of Salt

For the Mustard Aioli

  • Australian Honey: 1 tsp

  • Mayonnaise: 0.5 cup
  • Dijon Mustard: 2 tbsp
  • Lemon Juice: 1 tbsp
  • Clove Garlic (minced): 1 nos
  • Salt & Pepper: 1 nos
Directions

Prepare the Lamb

  • Season lamb loin with salt, pepper, and rosemary.

  • Sear in hot olive oil until medium rare (about 3 mins per side).

  • Rest, then slice thinly into canapé portions.
     

Make the Berries Blanket

  • In a saucepan, gently heat berries, conserve orange zest, lemon juice, and salt.

  • Simmer until slightly thickened but still vibrant. Add agar – agar and Cool
    completely.
     

Mix the Mustard Aioli

  • Whisk all aioli ingredients until smooth.

  • Chill for 30 mins before serving.
