
Australian Berries & Cream Cheese Tarts

Ingredients
Tart Shells

Australian Cream Cheese: 75g

Pampas Shortcrust Pastry: 1 sheet

Caster Sugar: 1 tbsp
-
Almond Meal: 1 tbsp
-
Coconut Essence: 1/2 tsp
Topping

Fresh Australian Raspberries: 1 punnet

Fresh Australian Blueberries: 1 punnet
- Icing Sugar: 1/4 cup
- Lemon Juice: 1 tsp
Directions

Preheat oven to 200°C (180°C fan-forced). Place an oven tray inside to heat.

Cut pastry into 4 squares and line four 8.5 cm fluted tart tins.

Bake for 15 minutes or until golden. Cool completely.

Mix cream cheese, caster sugar, almond meal, and coconut essence until smooth.

Mold mixture into cooled tart shells.

Top with fresh berries jam.

Mix icing sugar and lemon juice to create a runny glaze. Drizzle over berries.
