Australian Berries & Cream Cheese Tarts

Ingredients 

Tart Shells

  • Australian Cream Cheese: 75g

  • Pampas Shortcrust Pastry: 1 sheet

  • Caster Sugar: 1 tbsp

  • Almond Meal: 1 tbsp

  • Coconut Essence: 1/2 tsp

Topping

  • Fresh Australian Raspberries: 1 punnet

  • Fresh Australian Blueberries: 1 punnet

  • Icing Sugar: 1/4 cup
  • Lemon Juice: 1 tsp
Directions
  • Preheat oven to 200°C (180°C fan-forced). Place an oven tray inside to heat.
     

  • Cut pastry into 4 squares and line four 8.5 cm fluted tart tins.
     

  • Bake for 15 minutes or until golden. Cool completely.
     

  • Mix cream cheese, caster sugar, almond meal, and coconut essence until smooth.
     

  • Mold mixture into cooled tart shells.
     

  • Top with fresh berries jam.
     

  • Mix icing sugar and lemon juice to create a runny glaze. Drizzle over berries.
